A few words about our factory in Chania

The Mochlaki dairy is located in a stunning traditional village, one hour outside the city of Chania. The relationship between Eurofood POIOTITA S.A. and the family business of Mr.Mochlakis in Chania dates back to the 1980s, while the cheese dairy has been operating for over three generations. The production activity changes hands from one generation to the next, preserving the secret Cretan recipe for the famous PDO Gruyere, the "queen" of semi-hard cheeses.

RICH FLORA

A visit to the area is enough to discover the wild beauty and the rich flora, but also to smell the scents of mother nature and to make sure of the high quality nutritional value of the flora that feeds the sheep and goats of the area. The composition and structure of the region's ecosystem gives unique characteristics to the milk we use. For all these reasons, the area is classified as a PDO and is ideal for the production of graviera.

What our cheese makers have to tell us

We have a long-standing and stable relationship with local farmers based on mutual trust and respect. These people, with their passion, are very important to us, since in addition to the high quality milk they provide us with, they also give us their passion. The local flora is distinguished by its biodiversity and the area is classified as a “P.O.P.”, which means Protected Designation of Origin. The sheep and goats belong to special breeds and their fodder, as you can see, is of high nutritional value. This translates into milk of exceptional quality. From there, once our milk is collected, there are many stages of processing and control and the whole process is ISO 9001 and 22000 certified. The President and CEO of Eurofoodquality S.A. Dr. Xenophon Vergini is very demanding with the controls and his main concern is high quality, which is a credit to all of us.

The capacity of the plant is for processing over 2,500 tons of milk per year. In the last three years, since Eurofood Quality S.A. started to expand its export activities, the production needs have also increased. Thus, at the moment our dairy processes 1,300-2,000 tons of milk and produces up to: 150 tons of feta, 90 tons of kefalotyri, 40 tons of kefalograviera, 30 tons of kasseri, and finally 40 tons of anthotyro.

In 2015 Eurofood Quality SA proceeded to purchase standardization equipment in order to provide various sizes of packaging, which will more accurately meet the needs of each customer. This was absolutely necessary with the increase in export activities. Feta is currently produced in. Head cheese and cottage cheese in: up to 8 kg whole head and in 350 g portion (fixed or variable weight) and Head cheese : 13 kg whole head and in 350 g portion (fixed or variable weight).

Well, first there is the raw material , i.e. the excellent quality milk, and the “rennet”. Then there is the art of tradition, the passion of the cheesemakers and the strict controls at every stage of the production activity. I would also like to point out the farmer’s love for his animals is more than fascinating to me. Over the years, the concern of farmers for their sheep and goats, their nutrition, their health and their general well-being is something I will always remember from my career.
